MEXICAN LASAGNA CASSEROLE 
1 lb. ground meat
1 med. onion, chopped
1 lb. canned stewed tomatoes
1 (8 oz.) can tomato sauce
1 (4 oz.) can diced green chiles
1 pkg. taco seasoning
Flour tortillas
1 lb. cheddar cheese, grated

Brown meat and onion. Add other ingredients, except cheese. Simmer 10-15 minutes. Place 1/4 cup mixture in 9x13 baking dish. Place a layer of tortillas on top; add more mixture, then cheese. Repeat. Bake at 350 degrees for 25 minutes until cheese is bubbly. Serves 4- 6.

Optional: Before last of tortillas, spread 1-1 1/2 cups room temperature sour cream over mixture.

Suggestion: Instead of using stewed tomatoes, tomato sauce, and chiles, use 2 (10 ounce) cans of Rotel diced tomatoes.
