LOW FAT, LOW CHOLESTEROL OIL
PASTRY
 
1 c. enriched all purpose flour
1/2 tsp. salt
1/4 tsp. safflower oil
2 tbsp. cold water

Mix flour and salt in bowl. Blend in oil with fork. Sprinkle water over mixture, mixing well. Shape into ball and chill.

Roll out between two pieces of waxed paper. Remove top layer of paper and invert dough onto pie plate. Peel off other sheet of paper and flute edges of pastry. If pre-baked shell is needed, bake in a preheated 450 degrees for 10-12 minutes. Yields one 9-inch pie shell.
