OKRA 
3 lb. fresh okra
2 lb. lean lamb meat, cut into sm. chunks
3 cloves fresh garlic
1 can whole tomatoes
1 can tomato sauce
Salt and pepper

Cut off tops of okra and wash thoroughly. Let dry on paper towel for a few h ours. Put on cookie sheet and broil in oven until okra is a little toasted (instead of frying).

In saucepan, saute the meat with ground garlic until meat is cooked. Add okra and toss. Add 1 can of whole tomatoes and 1 can of tomato sauce and season with salt and pepper. Add coriander to taste (optional). Let cook for approximately 30-40 minutes on medium low heat. Serve with rice as a side dish.
