BAKED RICE AND FRUIT PUDDING 
1/2 c. reg. rice, uncooked
1 c. water
3/4 c. sugar
1 tbsp. cornstarch
Dash of salt
2 eggs
2 1/2 c. skim milk
1 tbsp. lemon juice
1/2 c. raisins
2 apples, finely diced

In a saucepan, combine rice and water. Heat to boiling, stirring occasionally. Reduce heat, cover, and simmer 15 minutes. All water should be absorbed. Preheat oven to 350 degrees. In a mixing bowl, combine the sugar, cornstarch, and salt. Beat the eggs and milk until smooth. Stir into the cornstarch mixture. Add the lemon juice, raisins, and apples and mix well. Pour into a casserole dish. Place casserole in a pan of very hot water, 1 inch deep. Bake about 1 1/2 hours or until knife comes out clean. Serves 12.
