BAKED RICE PUDDING 
2/3 c. rice
2 3/4 c. milk
1/3 c. sugar
1/2 tsp. salt
2 eggs (beaten)
1 tsp. vanilla
1/4 tsp. nutmeg

Combine rice, milk, sugar and salt in pan. Bring to a boil. Reduce heat, simmer 10 minutes. Mix eggs, vanilla, nutmeg in casserole dish. Stir in rice mixture. Place dish in a pan of hot water. Bake at 375 degrees for 20 to 30 minutes.
