PECAN PENUCHE CANDY 
3 c. brown sugar, firmly packed
1 c. milk
2 tbsp. butter
1 1/2 tsp. vanilla
1 1/2 c. chopped pecans

In a heavy stainless steel pan or an iron skillet, boil sugar and milk to a soft ball stage. (Test by dropping small amount in clear glass of cold water until a small ball forms). Stir constantly to prevent curdling. Add butter and remove to cool. DO NOT STIR! When it's lukewarm, beat until it's thick and creamy. Add vanilla and nuts, and spread in a buttered pan to harden. Cut into squares. You can spoon it out onto waxed paper to form patties if you wish.
