E-Z SWEET POTATO BISCUITS | |
1 small sweet potato, baked 1 egg, beaten 1 tbsp. butter, melted 1/4 c. milk 1 tsp. vanilla dash of salt Bisquick Skin the sweet potato and mash it in a medium bowl. Add egg, butter, milk, vanilla and salt. Mix well. If you have a KitchenAid mixer, place this mixture in it and attach the dough hook. Start adding the Bisquick and add enough until you form a dough like mixture consistency. Let this work the dough for about 1 minute. This makes a nice soft dough. Roll out dough to about 1/2 inch thickness and using your biscuit cutter, cut out your biscuits. Place on a cookie sheet and bake at 400°F for about 12 to 15 minutes or until biscuits are lightly browned. You can substitute pumpkin for the sweet potato. |
