BAKED CARROTS & APPLES 
4 or 5 carrots, cut into quarters lengthwise
1 to 3 unpeeled apples, quartered & sliced

1 tsp. salt
1 tsp. grated lemon rind
3 tbsp. hot water

Cover casserole, steam 5 to 10 minutes then bake in 400 degree oven for 15 to 20 minutes.

VARIATION: Omit lemon, top with wheat germ, bake until tender and sprinkle with 1/2 cup grated cheese, garnish with paprika, return to oven to melt cheese.
