APPLE PECAN MUFFINS 
1/3 c. brown sugar, packed
1/3 c. chopped pecans
1 tsp. cinnamon
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/4 c. oil
1 egg
1 1/4 c. chopped apples

Preheat oven to 400 degrees. Combine brown sugar, pecans and 1/2 teaspoon cinnamon. Set aside. Combine flour, sugar, baking powder, salt and rest of cinnamon. Mix milk, oil, eggs and apples. Add to flour mixture. Stir until moistened. Bake in muffin tins for 18 to 20 minutes.
