APPLE - BUTTER MUFFINS 
1 3/4 c. flour
1/3 c. sugar
2 tsp. baking powder
1 tsp. apple pie spice
1/4 tsp. salt
1 beaten egg
3/4 c. milk
1/4 c. cooking oil
1/3 c. apple butter
1/3 c. chopped pecans
2 tbsp. sugar

Bake at 400 degrees for 20 minutes. In mixing bowl combine flour, the 1/3 cup sugar, baking powder, apple pie spice and salt. Make a well in the center. Combine the egg, milk and oil. Add all at once to flour mixture. Stir until moistened.

Lightly grease muffin cups or line with paper cups (baking). Spoon a rounded tablespoon of batter into each muffin cup, top each with rounded teaspoons of apple butter, then with remaining batter. Combine pecans and 2 tablespoons sugar. Sprinkle on top. Makes 12 muffins.
