DAWN'S ROASTED POTATO BROCCOLI
SALAD
 
Its delicious and healthy!

5-6 potatoes
2-3 cups broccoli
1 cup chopped red onion
1 cup olive oil mayonnaise dressing (Hellmann's or Best Foods)
1 tbsp. prepared mustard (any kind)
hard cooked eggs (optional)
sliced black olives (Pearls)
olive oil

Cut potatoes into quarters and place on baking sheet. Spread olive oil to coat. Roast in 450°F oven for 30 to 40 minutes. Do the same to broccoli only roast at 425°F for 15 to 20 minutes. Allow to cool.

In small bowl combine mayonnaise and mustard. Mix broccoli, potatoes and chopped onion. Add mayonnaise/mustard. Mix well.

Garnish with hard cooked eggs if you wish. Allow to sit covered in refrigerator for at least 2 hours.

When ready to serve add some sliced black olives.
