ROASTED RED POTATOES WITH BACON
& CHEESE
 
1/2 cup light Ranch dressing (reduced fat)
1/2 cup shredded cheddar cheese (reduced fat)
1/4 cup bacon bits (Hormel)
2 lb. small red bliss potatoes, quartered (about 6 cups)
1 tbsp. chopped fresh parsley

Note: You do not have to use reduced fat cheese and Ranch dressing.

Preheat oven to 350°F. Mix dressing, cheese and bacon bits in a large bowl. Add potatoes; toss lightly.

Spoon into a lightly greased 13x9-inch baking dish and cover with foil

Bake at 350°F for 40 minutes. Remove foil and bake an additional 15 minutes or until potatoes are tender. Sprinkle with parsley.
