QUICK AND EASY BUTTERMILK
CINNAMON ROLLS
 
2 pkgs. yeast
1/4 c. warm water
3 tbsp. sugar
2 c. buttermilk
1 tsp. salt
1/2 tsp. baking soda
1/2 c. oil
4 1/2 c. flour

SPREAD MIXTURE:

1 c. soft butter
1 1/2 tsp. cinnamon
1 1/4 c. brown sugar
Raisins, nuts optional

Step 1: Dissolve yeast in warm water (let stand). Heat buttermilk slowly to warm. Add sugar, salt and baking soda. Add buttermilk mixture and yeast mixture together in large mixing bowl. Add oil and flour. Mix. Knead 15 times. Cover to rise for 15 minutes.

Step 2: Roll dough into a rectangle about 1/2 inch thick and spread with the spread mixture of butter, cinnamon, sugar. Sprinkle with raisins and or nuts. Roll like a jelly roll, cut and place in 13x9 inch pan in which 2 tbsp. butter and 1/2 cup brown sugar have been melted together. Let rise 30 minutes.

Bake in a preheated 400°F oven for 25 minutes and enjoy!

Absolutely the best cinnamon rolls I've ever made or eaten! I had never made cinnamon rolls with yeast before, so I was looking for one that didn't take too long to rise, and this was perfect. Absolutely the softest cinnamon rolls I ever ate. I had to sub bread machine yeast because I was out of regular yeast and didn't have buttermilk, so I used regular skim milk. And just to gild the lily, I put a little sugar/milk icing on top after baking. Oh... My... Gosh... NOM!! Can't wait to make these again with some real buttermilk! Thanks!

Absolutely delicious! This scrumptious recipe made us 1 large pan (9x13 inches) and one small pan (9x9 inches) and everyone who tasted them absolutely loved them. So moist and flavorful! It's also nice that they cook up so quickly...no waiting overnight. :)
