OAT BRAN MUFFINS 
2 cups oat bran
1/4 cup flax seed
1 tbsp. baking powder
1/4 cup brown sugar (or Splenda)
1 tbsp. cinnamon
2 egg whites (or egg substitute)
1 1/4 cups milk (or skim milk or evaporated milk)
2 tbsp. maple syrup (regular or sugar free)
1 tsp. vanilla
1/2 cup blueberries, raisins, etc. (optional)

Preheat oven to 400°F.

Grind oat bran and flax seed into a flour (coffee bean grinder or food processor works well). Mix all dry ingredients in large bowl.

Whip eggs. Then add remaining wet ingredients. Mix milk, egg, maple syrup and vanilla together. Blend with dry ingredients. Grease muffin tin and fill 2/3 full.

Bake at 400°F for 25 to 30 minutes.

Makes 12 muffins.
