MICROWAVE CREPES WITH ICE CREAM 
12 thin warm pancakes
1 (12 oz.) pkg. cream cheese, softened
1/4 tsp. vanilla
1 c. preserves or jelly of your choice
1 pt. vanilla ice cream
2 tbsp. water

Combine cream cheese, vanilla, and 1/2 cup preserves. Separately combine the remaining preserves and water. Heat mixture for 1 minute and set aside for topping.

Spread about 2 tablespoons filling in a pancake roll rolled side down. Brush with butter microwave for 1 1/2 minutes on high. Remove. Top with ice cream and remaining preserves. Serve warm.

Since microwave ovens vary in power, you may need to adjust your cooking time.
