BOILED RED CABBAGE 
1 sm. red cabbage, quartered & thinly sliced
1-2 tart apples, grated
1 1/2 tbsp. butter
1/4 c. vinegar
1/2 c. red currant jelly
1/4 c. water
1/2 tsp. salt

Melt butter in heavy kettle and add cabbage, apples, vinegar, jelly, salt and water. Cover and simmer until cabbage is tender, about 1 hour, stirring occasionally. Add sugar and more salt if needed. Serve with pork and other meat dishes. Serves 4.
