CHICKEN GUMBO 
1/2 c. unsifted flour
1 1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. black pepper
3 1/2 to 4 lb. chicken parts
1/4 c. cooking oil
1 (28 oz.) can plum tomatoes in puree
1/2 c. water
1 (10 oz.) pkg. frozen chopped okra or fresh okra
1/2 c. chopped onion

Combine flour, salt, paprika, pepper, roll chicken in flour mixture, coat well. Heat oil in Dutch oven over medium heat. Brown chicken on all sides. Remove from pan. Add onion to pan, saute until golden brown. Stir in tomatoes and water. Return chicken to pan. Cover tightly. Simmer 1 hour. Stir in okra, simmer uncovered 10 to 15 minutes until okra is tender and sauce is thickened. Serve hot.
