CHICKEN GUMBO 
1 stewing chicken, cut in pieces & dredge in flour
1/4 c. bacon grease
4 c. boiling water
2 c. skinned tomatoes
1/2 c. green corn
1 c. sliced okra
1 lg. green pepper or 2 sm. red peppers
1/2 tsp. salt
1/4 c. diced onion
1/4 c. rice
5 c. water
1-2 tsp. file powder, moistened with a little water

Brown chicken in bacon grease. Add boiling water. Simmer, uncovered until the meat falls off the bone. Drain the stock and chop the meat. Place in cooking pot and simmer, uncovered with tomatoes, green corn, okra, peppers, salt, onion, rice and 5 cups water. Combine these ingredients with the chicken and stock, correct the seasoning, add file powder moistened with water. Simmer. Serves 12 cups.
