LEFSA 
This recipe was given to me by a Norwegian friend many years ago.

Leftover mashed potatoes? Use them to make Lefsa!

Mashed potatoes
A little shortening
A little salt
Enough flour to make them stiff enough to roll

The amounts of the extra ingredients depends upon the amount of mashed potatoes used.

Make balls of potatoes large enough to roll out into 7 inch thin rounds. Heat griddle to moderate temperature. Lightly brown on both sides. Remove and stack when cool. These may be wrapped in foil and frozen for future use.

A Lefsa iron is not necessary but makes a waffle design on rounds.

To serve, fold Lefsa round in half, then in quarters. This makes a cornucopia that can be filled with your favorite jam.
