ZUCCHINI BACON 
1 lb. bacon, cut up into pieces
3/4 c. instant rice
3/4 c. boiling water
1/4 tsp. oregano
1 med. zucchini, sliced
1 chopped green pepper
1/4 tsp. salt
1 chopped tomato
1 onion, diced
4 to 5 slices American cheese

Fry bacon until crisp; drain. Add rice, water, zucchini, salt, tomato, onion, green pepper and oregano. Cover and cook until vegetables are tender. Put on cheese and melt.
