MOM (MARTHA) BLEEM'S CHEESE "RABBIT" | |
2 tbsp. butter (preferably home-made) 1 c. cream (skimmed from top of raw milk preferred) 1 1/2 c. Cheddar cheese, grated Heat butter and cream together. Stir in cheese and let it simmer or "stew". Dunk finger toast directly into the steaming cheese mixture, or pour the "rabbit", as Mom called it, over cubed toast and brown the top under the oven broiler. Serve hot. There are dozens of varieties of Rarebits. This recipe comes from Mom's ancestors from the Alsace region of France. She always laughed as she said the following: "There was a little dog whose name was Rover. When he was dead, he was dead all over!" Meaning, Rarebit-cold-is-solid. It can's be resusitated by heating. |
