MOM'S CREAM CHEESE MINTS 
4 oz. cream cheese, softened
Confectioners' sugar
Peppermint extract, about 1/4 or to taste
Wintergreen extract, about 1/4 or to taste
Green food coloring
Red food coloring
Granulated sugar

Mix cream cheese and confectioners' sugar by hand until smooth and doughy. Divide mixture in half; add a few drops of peppermint extract to one half and add a few drops wintergreen extract to the other half. Taste and adjust flavor.

Blend green food coloring (several drops at a time) into peppermint mixture until soft green; blend red food coloring (several drops at a time) into wintergreen mixture until pastel pink. Pinch off small pieces of dough, roll into balls and dip into granulated sugar. Refrigerate, covered. Yield: about 7 dozen mints.
