BAKED MACARONI AND CHEESE 
1 pkg. (8 oz.) elbow macaroni
1/4 c. butter
1/4 c. all purpose flour
1 tsp. salt
1/8 tsp. pepper
2 c. milk
8 oz. cheddar cheese, grated (2 c.)

Preheat oven to 375 degrees. Cook macaroni as the package label directs; drain.

Meanwhile, melt butter in a medium saucepan; remove from heat. Stir in the flour, salt and pepper until smooth. Gradually stir in milk. Bring to boiling, stirring. Reduce heat and simmer mixture 1 minute. Remove from heat. (This step can be done in microwave in 2 quart casserole, stirring mixture every 1 1/2 to 2 minutes until mixture boils.)

Stir in 1 1/2 cups cheese and the macaroni. Pour into a 1 1/2 quart casserole, and sprinkle remaining cheese over top. (If using microwave just mix cheese and macaroni in bowl used in step #2).

Bake 15 to 20 minutes or until cheese is golden brown. Makes 4 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
