CHEESE FISH DISH 
1 lb. fish fillets
1 tbsp. chopped green onion
2 c. cheese sauce
8 thick slices of tomato
1 c. soft bread crumbs
2 tbsp. soft butter
1/4 tsp. salt and pepper

Put fish into a baking dish. Add onion to the cheese sauce and pour over fish. Arrange tomato slices on top. Mix crumbs and butter, put on top. Sprinkle seasonings on.

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
1 c. milk
1/2 c. grated cheese

Melt butter in saucepan, blend in flour and salt, let these bubble up together. Take off the heat and add milk all at once. Cook over low heat until thickened, then add cheese. Stir until melted. Add to dish.
