BAKED HADDOCK AND CHEESE 
1/3 lb. fish per person
1/2 stick of butter
3/4 roll of Ritz crackers
10 oz. Cheddar cheese, shredded
A few drops of milk

Wash the fish and pat dry. Moisten with drops of milk. Set aside. In a skillet, melt butter on low heat. Add crumbled Ritz crackers. Add shredded cheese, saving 2 or 3 ounces for later. Toss to look like stuffing. Cover fish with "stuffing". Put remaining cheese on top. Refrigerate at least 6 hours, covered, with foil. Bake at 300 degrees for 35 minutes. Bake, covered, for the first 25 minutes.
