SWEET POTATO PUDDING 
3 sweet potatoes, boiled and mashed slightly
1 stick butter
2 eggs
3/4 c. sugar
3 tbsp. flour
1 tsp. lemon extract
1 tsp. vanilla extract
1 small can evaporated milk
nutmeg and cinnamon to taste

Whip potatoes with remaining ingredients until fluffy. Pour into greased 1-quart casserole dish.

Bake at 375°F for approximately 1 hour or until set.
