SWEET POTATO & PECAN PUDDING 
1 1/2 c. milk
1/3 c. butter
4 c. pared, grated sweet potatoes or yams
1/2 c. packed brown sugar
1 tsp. vanilla
1/2 tsp. nutmeg
1/4 tsp. each cinnamon & ginger
1/4 tsp. salt
4 eggs, well beaten
1/2 c. chopped pecans
Pecan halves for decoration (optional)

In saucepan combine and heat milk and butter. Stir into grated potatoes in bowl and combine thoroughly. Add and combine brown sugar, vanilla, nutmeg, cinnamon, ginger and salt. Add beaten eggs and pecans, stirring to combine thoroughly.

Pour mixture into 1 1/2 quart casserole and bake at 325 degrees for 1 hour. Arrange pecan halves on top of pudding, if wished. Bake an additional 30 minutes or until done.

Makes 6-8 servings.
