SWEET POTATO PUDDING 
1 1/2 canned sweet potatoes, mashed
2/3 c. sugar
2 tbsp. butter, melted
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. vanilla
1/2 tsp. salt
2 tbsp. lemon juice
3 eggs, beaten
1 c. light cream

Mix sweet potatoes and sugar, add butter, nutmeg, cinnamon, vanilla, salt and lemon juice, mix well. Gradually add eggs and cream. Mix until smooth, pour into buttered dish. Bake at 375 degrees for 35 to 40 minutes.
