EASTER FRITTATA (OMELETTE) | |
6 large eggs 1/2 c. water 1/2 tsp. baking powder 3/4 c. flour 1/2 tsp. salt 1/2 lb. fresh cheese, diced 1/2 lb. Ricotta cheese 1/2 lb. hot or sweet sausage, cooked and crumbled 1/2 lb. salami, diced 1 tsp. oil Beat eggs, then beat with water until well combined. Add flour, baking powder and salt. Add fresh cheese, ricotta and sausage and salami. Mix well. In a large skillet add oil and pour batter into oil when warmed. On medium heat, cook until crust forms on bottom. Flip over onto a large dish and slide back into pan to cook the other side. Bake in a preheated 325°F oven for 20 minutes. |
