MEXICAN RICE 
1 lb. hamburger meat
1 onion, cut up
1 green pepper, cut up
Salt, pepper, garlic to taste
1 (16 oz.) Ro-Tel with liquid
2 c. cooked rice
2-3 c. grated cheese
1-2 c. crushed tortilla chips
1 pkg. onion soup mix

Brown meat with onion and peppers. Drain grease off. Add Ro-Tel and rice to meat. Add all spices. May add water if too dry. Put in pan. Add cheese and chips on top. Bake at 350 for 30 minutes or until cheese has melted.
