BEST BREAD STICKS OR PRETZELS
1 pkg. dry yeast (1 tbsp.)
1 tsp. salt
1 tbsp. malted milk powder
1 1/2 c. warm water (115 degrees)
1 tbsp. honey
4 to 4 1/2 c. sifted flour

TOPPING:

One beaten egg or cold water, coarse salt, caraway seeds, dry onions, garlic powder, grated Parmesan cheese, etc.

In a large bowl soften yeast and honey in warm water. Add malted milk powder and salt; blend. Add flour gradually, mixing until dough pulls away from bowl to form a ball. Divide into half, divide each half into 12 pieces; roll each piece between hands or stretch on floured board to form sticks about 10-12 inch long. Place lengthwise on greased cookie sheet (6 per sheet). Brush with beaten egg for soft sticks, or with cold water for crispier sticks. Sprinkle with desired toppings. Let rest for about 10 minutes, bake at 400 degrees about 10-12 minutes. Cool on rack.

Shape into pretzel shapes instead of sticks, drop with slotted spoon into simmering water with baking soda added. Place on baking sheet, sprinkle with salt and bake as directed above.
