HAMBURGER AND ZUCCHINI CASSEROLE 
2 tbsp. butter
1 med. onion, finely chopped
1 lb. hamburger
1/2 tsp. salt
1/2 tsp. pepper
4 med. zucchini
6 slices sharp Cheddar cheese (or more to taste)
1 can cream of mushroom soup
1/2 to 1 c. cracker crumbs

In skillet, melt butter and saute finely chopped onion until transparent. Add hamburger, salt and pepper and brown meat.

In a pot of water with 1 teaspoon salt, put whole zucchini and bring to a boil. Boil for 5 minutes. Remove and cut into 1/4 inch slices.

In a 2-quart casserole, layer meat, zucchini and cheese using half of each ingredient, then repeat layers. Pour soup from can on top and spread to cover. Sprinkle with cracker crumbs. Bake at 350 degrees for 1 hour. Serves 4.
