HAMBURGER-ZUCCHINI CASSEROLE 
2-3 small zucchini
1 lb. hamburger
1 onion, chopped
3 cloves garlic, peeled and minced
1 can mushroom soup
8-12 saltine crackers
1 tbsp. butter
1 c. shredded cheese

Cook ground meat with onion until meat is brown, adding garlic near the end of cooking. Drain and crumble.

Cook zucchini until tender, drain. Combine ground meat mixture with zucchini and mushroom soup.

Pour into a greased casserole dish and top with shredded cheese and crackers.

Dot with butter and bake at 350°F for 30 minutes.

Loved it! Super easy! I didnt have cream of mushroom so I used cream of chicken. Next time I will add corn. I may also use chicken instead of hamburger. I wish I found this recipe sooner, I had so much zucchini from my garden I didnt know what to do with them so gave most of them away. Here tonight my fiance said he could eat this every night!
