SWISS CHEESE MEDLEY 
1 (16 oz.) bag frozen vegetable combination, thawed and drained
1 (10 3/4 oz.) can condensed cream of mushroom soup
1/3 c. sour cream
1/4 tsp. black pepper
1 (4 oz.) jar pimentos, diced
1 (2.8 oz.) can French fried onions
1 c. shredded Swiss cheese

Combine all ingredients except half of cheese and 1/2 can onions. Pour into 1 quart shallow baking dish. Bake covered at 350 degrees for 30 minutes or until vegetables are done. Top with cheese and onions. Bake uncovered for 5 minutes more or until onions are a golden brown and cheese is melted. Serve hot!
