CHEESE AND NUT LOAF 
3 tbsp. oil
1 onion, chopped
1 1/2 c. chopped celery
1 c. chopped cashews
1 c. chopped walnuts
2 c. cooked brown rice
2 c. (1 lb.) cottage cheese
2 tbsp. chopped chives
1/4 c. toasted sesame seeds
1/4 c. chopped parsley
1/2 tsp. thyme
Salt to taste
3 eggs, lightly beaten
1/4 c. wheat germ

Preheat oven to 375 degrees. Heat the oil in a skillet and saute the onion in it until tender. Add the celery and cook 5 minutes longer. Combine the cashews, walnuts, rice, cottage cheese, chives, sesame seeds, parsley, thyme, salt and eggs in a large bowl. Stir in the onion mixture.

Oil a 9 x 5 x 3 inch loaf pan and dust it generously with wheat germ. Turn the cheese-rice-nut mixture into the pan and sprinkle remaining wheat germ over the surface. Bake 1 hour. Unmold to serve. Yield: 4 to 5 servings.
