OLD-FASHIONED MEATLOAF | |
1 1/2 lbs. meatloaf mixture (beef and pork) 1 egg 2 slices whole wheat bread, crumbled (or 3/4 c. oatmeal) 1 med. size onion, grated 1/4 c. chopped parsley 1 sm. can evaporated milk 1 1/2 tsp. basil 1 tsp. salt 1/4 tsp. pepper 6 med. potatoes, parboiled 6 stalks celery, parboiled 6 carrots, parboiled Combine meatloaf mixture, egg, bread crumbs (or oatmeal), grated onion, parsley, evaporated milk, basil, salt and pepper in large bowl, just until well blended. Shape into a round loaf in shallow roasting pan; arrange parboiled vegetables around meatloaf. Brush vegetables with oil. Bake in 375 degree oven, basting vegetables with oil several times, 1 hour, or until vegetables are golden. |
