10 BEAN SOUP 
1 bag 10 dried ten bean soup mixture
Cover with water
1 tsp. olive oil or vegetable oil
1 med. onion
1 c. celery, diced
1 bay leaf

Wash dried beans and cover with water and soak overnight. In the morning drain and add fresh water. Place on stove and bring to a boil. Add onions and celery and vegetable (olive) oil and bay leaf. Salt and pepper to taste. Cook on low fire 4 or 5 hours. Serve with rice.
