SOFT OATMEAL RAISIN COOKIES 
1 c. raisins
1 c. sugar
1 c. shortening
2 eggs
2 c. quick oatmeal
1 tsp. baking soda
1/2 c. nuts
Pinch of salt
2 c. flour

Cook raisins in 1 cup water. Cool. Cream sugar with shortening. Add eggs; beat well. Add raisin mixture and other ingredients. Drop by teaspoon on cookie sheets. Bake about 10 minutes in 350 degree oven. Do not overbake.

This is a good basic recipe that was chewy and soft. I added some cinnamon and vanilla for added flavor.
