CHICKEN ALMOND SALAD 
2 c. cut up frozen mock chicken
1 c. chopped celery
2 hard cooked eggs
1 tbsp. lemon juice
1 tsp. salt
1/2 c. mayonnaise
1/2 c. salted almonds, halved

Toss all ingredients together except almonds. Chill. Fill pastry tarts with salad and garnish with almonds and olive slices. Serves 8.
