BROCCOLI RICE QUICHE 
1 1/2 c. cooked rice
1 egg beaten
3/4 c. shredded cheddar cheese
1 (10 oz.) pkg. frozen broccoli
4 oz. canned mushrooms (drained)
1 tbsp. minced onion
1/3 c. milk
2 eggs beaten
1/4 tsp. pepper

Combine rice, egg and 1/2 cup of the cheese. Mix well and press into a greased 9 inch pie plate. Set aside. Cook broccoli, drain well. Add remaining cheese and other ingredients to broccoli. Mix well and pour into pie plate on top of rice mixture. Bake at 375 degrees for about 50 minutes. Makes 1 (9 inch) quiche.
