SHRIMP AND RICE SALAD 
1 c. raw rice
1 c. mayonnaise
3 scallions or green onions
1 to 2 tbsp. fresh chives
1/2 onion
1 1/2 c. sm. shrimp
Pinch of ginger
Salt
Lemon juice
Lettuce
Toasted sesame seeds
Curry powder to taste

Cook rice and cool. Chop green onion, chives, and onion fine. Add to rice. Add shrimp and mayonnaise. Season to taste with ginger, salt, lemon juice, and curry powder. Refrigerate. Serve heaped on lettuce and garnish with toasted sesame seeds. Serves 5 to 6.
