SHRIMP & RICE SALAD 
1 1/2 c. tomato juice
1 1/2 c. minute rice
1/2 tsp. salt
1/2 c. chopped dill pickle
1 tbsp. chopped onion
1/8 tsp. pepper
1 lb. shrimp
1 c. sliced avocado
3/4 c. mayo
1 pkg. frozen peas, cooked

Cook juice, rice, salt according to rice directions. Add pickle, onion, peas and pepper. Refrigerate before serving. Add shrimp, avocado and mayo. Toss and serve.
