VERSATILE VEGETABLE SAUCE 
1 stick butter
1 tsp. salt
2 c. sour cream
1/4 c. chopped chives
1/2 c. grated Parmesan cheese
1/3 c. cucumber, chopped

Cream butter, cheese, and salt together. Blend in sour cream, chives, and cucumber. Spoon over vegetables. Yields 3 cups.
