RHUBARB CUSTARD DAIRY BARS 
1 c. butter
2 c. flour
4 tbsp. sugar
5 c. finely chopped rhubarb
3 eggs, beaten
2 c. sugar
7 tbsp. flour
1 c. milk
1/4 tsp. salt

Mix butter, flour, and sugar and put in pan. Bake at 350 degrees for 10 minutes. Mix remaining ingredients adding rhubarb last; put on top of baked crust. Bake at 350 degrees for 50 minutes.

TOPPING:

4 oz. cream cheese
1/2 c. sugar
1/2 tsp. vanilla
2 c. Cool Whip

Blend, adding Cool Whip last. Spread over COOLED bars.
