KIDNEY BEAN SALAD 
2 c. cooked kidney beans
1/2 c. sliced celery
1/2 c. chopped walnuts
1/8 c. mayonnaise
1/8 c. plain yogurt
1 tbsp. apple juice concentrate
1 c. diced, unpeeled apples
1/3 c. diced Cheddar cheese

Combine beans, celery, walnuts, onion, mayonnaise, yogurt, and juice; mix well. Cover and chill. Stir in apples and cheese. Serve on a lettuce-lined bowl.
