AUTUMN CHEESECAKE 
1 c. graham cracker crumbs
3 tbsp. sugar
1/2 tsp. cinnamon
1/4 c. butter
2 (8 oz. each) pkg. cream cheese, softened
1 lb. Ricotta cheese
16 oz. sour cream
1 1/2 c. sugar
3 tbsp. cornstarch
3 tbsp. flour
1 stick melted butter
1 1/2 tsp. lemon juice
1 tsp. vanilla
4 eggs
4 c. thin peeled apple slices
1/3 c. sugar
1/2 tsp. cinnamon
1/4 c. chopped pecans

Combine crumbs, sugar, cinnamon and butter. Press into bottom of 9 inch spring form pan. Bake at 350 degrees for 10 minutes.

Mix cream cheese and ricotta well. Add eggs, lemon juice, vanilla, flour, melted butter, sour cream, sugar, and cornstarch. Pour over crust.

Toss apples with combined sugar and cinnamon. Spoon apple mixture over filing, then sprinkle nuts on top. Preheat oven to 400 degrees then lower to 350 degrees and bake for 1 hour or until set. Leave in oven until oven cools.
