SHRIMP STUFFED POTATOES 
6 med. baking potatoes
1/2 c. butter
1 c. grated sharp cheddar cheese
1 tsp. salt
Dash cayenne pepper
2 tbsp. onion, minced
3/4 c. milk
4 1/2 oz. can broken or tiny shrimp
Paprika
Fresh parsley

Scrub potatoes well; prick with fork. Bake at 400 degrees for 1 hour or until done. Cut potatoes in half lengthwise; scoop out pulp., leaving enough to keep potatoes shape. Set skins aside. Combine pulp with butter, cheese, salt, pepper, onion and milk. Whip with electric mixer until smooth and fluffy. Fold in shrimp. Refill potato shells. Sprinkle.
