SHRIMP AND POTATO SALAD 
1 c. boiled shrimp, chopped
3 c. cooked potatoes, cubed
1 c. celery, diced
1/2 c. sweet mixed pickle relish
2 boiled eggs, chopped
1 tsp. salt
1/2 c. sour cream
2 tbsp. mayonnaise
1/2 env. Italian salad dressing mix
Lettuce

Mix together the potatoes, celery, relish, eggs, and salt. To sour cream, add mayonnaise and dry Italian salad dressing mix. Combine the potato mixture with sour cream. Refrigerate. To serve, add the shrimp and serve in a salad bowl lined with lettuce. Serves 8.
