POTATO-CHEESE PIE | |
3 eggs 1 tsp. salt 1/2 tsp. rosemary or nutmeg 1/4 tsp. pepper 2 c. half and half 4 med. potatoes, peeled and shredded coarse (3 c.) 1/3 c. sliced green onions, including tops 1 c. coarsely shredded sharp Cheddar cheese (4 oz.) Beat until well blended eggs, salt, rosemary and pepper. Stir in half and half, potatoes and onions. Turn into well greased 8 inch square baking pan. Sprinkle with cheese. Bake in preheated 400 degree oven 35-40 minutes or until knife inserted in center comes out clean and potatoes are tender. Cool on rack 5 minutes. Cut in squares to serve. Makes 4 servings. |
