JIM'S MARINATED ROAST | |
1-2 (3 lb. ea.) beef chuck roasts MARINADE: 1 cup soy sauce 1/2 cup brown sugar 1/2 cup white vinegar 1/2 cup pineapple juice 2 tsp. salt 1 tbsp. garlic powder (can add more according to your taste) Put all marinade ingredients in small pan, heat till just boiling, cool. Put roasts in marinade sauce and place in refrigerator for at least 4 hours or overnight. I use Ziploc style bags. Charcoal Grill: Bank your coals on each side (nothing directly under meat) when coals are ready: sear meat on both sides for 1 minute on each side. Leave vents open on grill, put on cover and grill for 30 to 40 minutes for medium rare. I usually baste a few times with leftover marinade. Gas Grill: Use low to medium setting. 15 minutes for medium rare and 20 minutes for medium. Submitted by: Marge |
